Day 6: Favorite Christmas Cookie
Pan de Polvo!
These are Spanish shortbreads covered with cinnamon and sugar. Around Christmas time, if you are lucky enough to teach in a Mexican-American community (as I was), your will often bring you Christmas treats like tamales, b uñuelos, and pan de polvo. There are many other communities that have a cookie similar to pan de polvo - they are close to the Russian tea cakes that my great-grandmother used to make.
Pan de polvo can be addictive. Usually, they are made with lard, but since I don't eat pork, I make them with butter. Still delicious! (Click here for the recipe).
